1、牛腩切1厘米见方的块,焯水捞出备用;

2、锅底油烧热,放葱姜蒜末爆香,下牛腩翻炒,加米酒、蚝油、酱油、糖炒匀,加热水烧开后炖1个小时,加盐大火收汁。备用。 j _n?/@|

3、泡一小时的米放进煲仔锅,加热水,水量控制在比平时焖米饭的水量稍少些,让米饭稍硬;9l/b;}1F;A;F
4、煲仔锅加盖放火上直接加热,注意观察锅内变化,待米饭差不多把水吸收进去时,用小勺盛色拉油沿锅内檐、米饭的边际淋油;j,E)hQ'@!a&\7Q
5、转小火,不断倾斜和旋转锅,均匀加热锅的每一个侧面,此时锅内劈啪作响,在锅内壁形成一层焦香的锅巴;-LIcG;h.JS\
