中秋快到自己动手《冰皮月饼》超赞[68P]
中秋快到了,当然中秋吃得最多的就是冰皮啦~买现成的很贵,自己做,成本就低很多很多~自己也跃跃欲试,(FDVX0fy5RM
于是买了材料和模具就动手做。

用了两种方法来做,三种口味,发现用澄粉的那种方法,

口感是比较好,而且很柔软,很滑很细腻,绿豆馅和奶黄馅IHx e8O

[/color]低粉45g 粟粉45g 吉士粉90g 砂糖160g 牛油45g

炼奶60ml 牛奶540g 鸡蛋90g(三个左右)

1、将牛油隔水煮溶备用

2、炼奶、牛奶拌匀

3、把粉类和砂糖混合,然后把蛋分三次加入

5、把(4)入锅大火蒸15-20分钟至熟UmV }U
6、蒸熟后放凉,然后搓滑即可

去壳绿豆200g 砂糖100g 色拉油90ml

2、把煮透的绿豆用搅拌机搅成绿豆泥 i({+C

3、把绿豆泥倒入锅中分次加入砂糖,分次加入色拉油,小火炒干即可

1、所有粉类加砂糖混合

3、加入色拉油,过筛一次(我过了两次)

1、牛奶、砂糖、炼奶、色拉油混合拌匀YN%U3q(Ip

3、搅拌好的面糊静置30分钟后入锅大火蒸30分钟至熟

1、冰皮冷却后,把冰皮分成25克的小挤子压扁(这个克数是用果冻模的,如果

用月饼模一个小挤子大概30克左右),放入馅料,包紧、收口、搓圆,在手上拍`+t}4k/YII t$V

2、在模具里撒一点糕粉,让糕粉均匀粘在模上壁上,以方便脱模,然后把包好的)]|/]h og9K
冰皮面团放进模具用手掌压实

3、把月饼用力磕一下,再倒出来,就完成了
