宫保菜是四川传统名菜之一,最初以宫保鸡丁为代表,后来衍生出宫保豆腐、宫保虾仁等菜式。艳萍称,宫保菜的辅料是以干辣椒、花生米为主,主料可依个人口味选择,她今天用八爪鱼为主料,与辅料一同爆炒而成,使成菜不仅色泽鲜亮、酸甜香辣,而且滑嫩味美、香浓爽脆。

1、花椒有青红之分,青花椒带有清香味,红花椒的麻味较重,建议用红花椒来炒八爪鱼。s#k

2、花椒要先用热油炒香,捞起弃之,可使炒熟的八爪鱼又香又麻,不弃之的话,会不时吃到花椒粒,使嘴巴很麻。

3、八爪鱼易熟,不宜烹调过久,否则会炒老难吃,应先飞水除一下腥味,再下锅拌炒几下便可。
