粗砂糖、棉白糖.旧糖浆及清水一同放在锅内以中火煮沸.加入柠檬汁後转用慢火熬煮约1小时,煮至糖滴在水中不散开而起软珠即可。如糖胶太硬时,可加水再煮片刻.结果约有1公斤的成品 (糖胶).,zr*Zcd

面粉筛在桌上摊开,将糖,油、硷水放入中拌匀.慢慢将四周面粉拨入搓成一软团,放置3小时後方能取用,否则月饼不容易敲出(出模).将软团搓成长条, 切成每团35克等份.

将每等份放在桌上。以手掌按成中央略厚,周围略薄之圆形,将馅料放在中央包著,放入以洒粉之饼模中按平.将模向左右边一敲,取出饼模放置涂油之饼盘中,预备入烤箱.

将饼皮分成等份。如要用咸蛋黄的,每份馅料中央放一咸蛋黄後约 154 克重,再以饼皮包裹。置洒粉饼模中按实後敲出, 排放在涂油烤盘上.以喷水壶喷水在饼上後,放入400F度(煤气6度)之烤箱内烤约5分钟,取出,薄薄涂上一层蛋液,将烤盘再放入烤箱,以300F度(煤气2度)再烤15至18分钟,取出放凉即成Kd4`FE0E
